Lent Week Five

After a gorgeous week, a haar rolled in. And then we woke up to a dusting of snow on Thursday. We had a good run of it! We are very nearly at the end of Lent. And as I anticipated, just as I was getting tired of the limited veg choices and feeling generally stuck in our options, April is about to open some new doors. We have done really well though, even though we’ve been hit with burger cravings here and there. Though part of me feels that maybe we’ve tried a few too many new things, as I find myself a bit exhausted by constantly reading through a new recipe five times to make sure I’m not forgetting anything (though 70% of the time it seems I still do). Luckily next week has a host of routine favorites. I’m generally feeling a bit low on energy, I think it’s this second winter!



Sunday night we tried the eponymous Midnight Chicken of Midnight Chicken, surrounded by new potatoes to soak up the delicious juices and an asparagus salad. I really like this book, particularly as an antidote to recipe stress, as they are really relaxed. I’m not too fussed about exact measurements generally, but find it refreshing when the recipe writer has a relaxed attitude.


Monday was supposed to be those 12-hour fava beans again. And you’ll never guess what happened! I failed to prepare. So I threw together a rice pilau (made with the stock from the chicken carcass) and some beluga lentils.


Tuesday the haar had fully set in, and Pinto Bean Tortilla salad was on the menu, but it was bumped because it was too gloomy for salad. Pasta night to the rescue. Just a simple tomato sauce and a spinach salad on the side.


Wednesday we had the salad (from Cool Beans but you can find it here). Simple but really delicious (simple because I definitely just used store bought tortilla chips instead of frying tortillas). The dressing was so delicious, I will definitely be using it on other things as well!


Thursday I was not feeling well and Matt put together a veggie curry for us. Tasty, simple, and comforting.


Friday Matt fried up some Coconut Shrimp from Serious Eats and it was so delicious! I made the peanut and cabbage slaw based on the Asian Slaw in Salt, Fat, Acid, Heat and I think it was the perfect side for it.


Saturday we had Matt’s vegetarian chili. A classic, think I will finally have to get around to posting it!
